Decadent avocado chocolate mousse

We're days away from a new year and of course, the planning is in full swing here. We aren't party-people so New Year's usually entails a nice, quiet evening with champagne and a good dessert. And speaking of dessert - I want to share one with you here that I am sure you will love.

​This year we have made it our goal to eat healthier and remove processed foods from our diet. We have made a lot of changes and became more creative in the kitchen (in the previous post that I made delicious brownies out of chickpeas) so I was intrigued when I heard about avocado chocolate mousse. ​

I don't know of one person that doesn't like avocados. I LOVE them! And I try to incorporate them into our diet as often as I can.

So after seeing how simple it is, I decided to give it a try. The result? The creamy, delicate chocolate mousse that reminds you nothing of avocados (I imagine you don't quite see dessert when you think of them).

I used for two avocados, raw honey (I put two teaspoons - can be replaced with agave nectar - adjust according to desired sweetness), almond milk, a tiny sprinkle of sea salt and cocoa powder. I mixed all ingredients in a blender until smooth, transferred the mixture to serving dish (I used glasses), topped with dark chocolate and frozen raspberries and refrigerated for about an hour before serving.

This dessert is very light, not to mention healthy, so it won't make you feel guilty about the extra calories. It's also so easy to make, I will definitely be serving it for New Year's.
