Easy dark chocolate chickpea brownies

Note: I wanted to re-share this post since I’ve seen a lot of people practicing their baking skills these days. I hope you find it as tasty as I did.

A few years ago we made the conscious choice to eat better and by that, we mean healthier. As a result, we eliminated processed foods and sweets, eliminated unhealthy or empty carbs (like white bread, white pasta, white rice), and significantly reduced our meat consumption to a few times a year (generally for eating-out only - yes, we don’t eat out much).

We definitely have noticed benefits health and appearance-wise, but once in a while our sweet tooth kicks in, at which point I look into healthy baking recipes.

Apart from switching to whole wheat, I also looked into replacing it in some recipes.

I love baking and I often look for recipes online, and try them "as-is" or modify them, either based on what I have in my home or, what I like to substitute.

So when I find myself with too many cans of chickpeas, aka garbanzo beans (always a must-have in our household - if you don't know already, I love making my own hummus). I have heard about chickpeas and beans replacing the "flour" in baking, so I decided to give them a try.

​I found this recipe and I got to work. I did substitute the full-fat canned coconut milk with unsweetened vanilla almond milk, omitted the coffee grinds, and used chopped dark chocolate.

​The result? Gooey, chocolaty delight that doesn’t taste like chickpeas, in case you’re wondering. Try it yourself and see how great it is.
