Dark chocolate chickpea brownies

This year we made the conscious choice to eat better and by that we mean healthier.
As a result, we eliminated processed foods and sweets, reduced unhealthy carbs (like white bread or white pasta) and meats.
We have definitely noticed benefits health and appearance-wise, but once in a while our sweet tooth kicks in and, well, we need to do something about that.

So I became creative... as in looking up recipes for healthier "desserts".
I love baking and I often find my recipes online, try them "as-is" or modify them, either based on what I have in my home or, what I like to substitute.
The other day, I found myself with too many cans of chickpeas, aka garbanzo beans (if you don't know already, I love making my own hummus). I have heard about chickpeas and beans replacing the "flour", so since I had so many I decided to give them a try.
I found this recipe and I got to work. I did, however, substitute the full-fat canned coconut milk with unsweetened vanilla almond milk, omitted the coffee grinds and used chopped dark chocolate.
The result? Gooey, chocolaty delight.

I urge you to try this recipe - you won't even be able to tell that it's made of beans.

Do you have any favorite "healthy" recipes? I'd love for you to share.

Thanks for reading and have a fabulous day!

XOXO,
Em
